From Munich to Toronto

Moving to Toronto changed the way Benjamin cooks. Toronto is one of the most diverse food cities in the world, and its markets, growers and neighbourhoods offer ingredients and influences that were never part of a Bavarian kitchen. Rather than reproducing German classics exactly as they are at home, he lets the two sides meet: European roots and technique, Canadian ingredients and seasons. Ontario produce in summer, root vegetables and preserved flavours in winter, fish and dairy from Canadian producers, and herbs and spices from the communities that make the city what it is.

Today, Benjamin works as an independent private chef rather than as part of a catering company. That distinction matters.
